APS HABANERO SWEET - The Non-Spicy Wonder

**Basic Info**

Species: *Capsicum chinense*

Origin: Developed varieties (Cornell, Texas, New Mexico breeding programs)

Heat: Sweet (0-850 SHU)

Type: Sweet habanero variety

**Story**

The APS Habanero Sweet represents one of the most innovative developments in pepper breeding - a habanero that carries all the beloved flavor characteristics of its spicy counterparts while eliminating the overwhelming heat. This variety was developed through careful selective breeding programs at institutions like Cornell University (Habanada), Texas Agricultural Experiment Station (TAM Mild Habanero), and New Mexico (NuMex Suave Orange).

The story of sweet habaneros begins with the recognition that many people love the fruity, floral flavor of habaneros but cannot tolerate their extreme heat (100k-350k SHU). Through multiple generations of cross-breeding, researchers created varieties that maintain the characteristic lantern shape and complex flavor profile while reducing capsaicin content to minimal levels.

In 2014, the Habanada variety - developed by breeder Michael Mazourek at Cornell - was featured at the Culinary Breeding Network Variety Showcase, where chef Nora Antene created a Habanada sherbet that became an instant hit. This demonstrated that sweet habaneros could be used in applications far beyond traditional savory cooking, from desserts to beverages.

The APS Habanero Sweet likely represents a selection from one of these breeding programs, refined for consistent performance and flavor. The pods mature to bright orange or red, maintaining the classic habanero appearance while delivering a mild, fruity sweetness with zero to minimal heat. This makes them accessible to families with children, those sensitive to capsaicin, or anyone who wants habanero flavor without the burn.

In culinary applications, sweet habaneros are remarkably versatile. They can be eaten raw, stuffed, roasted, or incorporated into desserts - a flexibility that their spicy counterparts cannot match. The fruity, floral notes shine in salads, salsas, ceviche, and even fruit-based dishes where the sweetness complements other ingredients.
