Aji Mochero - The Prodigal of Peru

The Story: This ancient variety hails from the Moche Valley—a region steeped in Peruvian history and agriculture. It's one of those rare peppers that's been cultivated for generations, making it a true heirloom among the very hot Habanero.
The Plant: A compact powerhouse. At just two feet around and one-and-a-half feet tall, it's a dwarf that doesn't compromise on yield. The spreading growth habit makes it perfect for pots, hanging baskets, or small garden spaces. One of the most prolific C. chinense varieties you'll find.
The Pods: Conical beauty that transitions from dark green to brilliant yellow. The skin has a delightful slight wrinkle and reveals a small, tight cluster of placenta and seeds inside. The yellow is vibrant—almost luminous when fully ripe.
The Flavor: Here's where it shines. Fruity and citrus-forward, with grassy undertones and a whisper of floral notes. The heat builds slowly and gracefully—no rush, no agony—just a warm plateau that lingers on your tongue. It's habanero-level heat but with more complexity.
The Kitchen: This is a working pepper. It earns its keep in sauces, stews, and seafood dishes. The yellow pods add visual drama to ceviche and salsas. For powder-making, it's exceptional—dries beautifully and retains its flavor profile.
The Confusion: Don't let the name fool you. While also called "Limón," this is C. chinense—not to be confused with the Aji Lemon (C. baccatum), which is milder and has a different flavor profile.
